Does Theravada have any work that deals with valid means of knowledge (pramana) ?

Perhaps you are asking about something similar to what we find in Patanjali re: pramana? I know of suttas that refer to vitakka and vicara and the Buddha also discusses smriti but not in the same way as Patanjali, I think. Perhaps there is something systematized about knowing in the Abhidhamma that might interest you.
